Pea Pâté recipe
This is a delicious vegetarian pâté that’s fantastic with cheese and crackers. It’s a brilliant green colour and tastes as good as it looks.
Ingredients:
200g petit pois, cooked
50g walnuts
15 thin wheat crackers
1 large onion
2 to 3 cloves of garlic
1 egg
3 tbsp. olive oil
Salt and pepper
Directions:
Place the egg in a saucepan of cold water and turn the heat on. Bring the water to the boil and cook for ten minutes. Pour the hot water from the saucepan and fill with cold water to cool the egg down. Once cool, peel the egg and chop finely.
Finely chop the onion and mince the garlic.
Heat the oil in a large frying pan and add the onion and garlic. Leave to cook for around ten minutes or until softened. Don’t let it brown.
Once softened, leave the onion and garlic to cool.
Blitz the walnuts and crackers in a blender until they resemble fine crumbs. Add the peas and the onion and garlic mixture and blitz again.
Season well and taste the pâté to check whether it’s seasoned enough. Put the egg into the pate and stir well. Add more oil or a little water if needed to thin the pâté out.
