Goat’s Cheese Spread recipe

I’m calling this one a spread as it’s not so much a recipe as a combination and a quick mix with a spoon, but it’s still delicious. Serve it with sliced Italian bread and some wild rocket for a lovely Italian inspired snack.

Ingredients:

225g goat’s cheese
50ml good quality extra virgin olive oil
1 tbsp. chopped parsley
1 tsp. lemon juice

Directions:

  1. Simply mix everything together well in a large bowl.

  2. Put into the fridge for around half an hour and then serve!
